This is one of my favorite go-to recipes at the lake – so simple, quick, and delicious. This feeds a big group of people easily. If you have more than six people, just add a chicken breast or two and increase salsa to a small jar (roughly 2 cups).
You’ll need:
4 boneless chicken breasts
1 Tablespoon taco seasoning
1 Cup of your favorite salsa – I like to use a local fresh salsa.
Put chicken breasts in the crockpot, cover with salsa, and stir in the taco seasoning. Slow cook all day on low. When you’re ready to eat, shred the chicken. Pro tip: the best way to shred chicken is to throw it in the Mixmaster! It’s so easy and turns out nice and thin!
Add the chicken to your favorite taco shells and bed of lettuce. Top with cheese, guacamole, and cilantro. Nope, you don't even need salsa because it is baked into the flavor of the chicken!
