Mom's Famous Pumpkin Bread

For those of you that were real estate clients in my past career you know all about my mom's famous pumpkin bread! This is to.die.for!

No, it's not low carb, vegan, healthy.  It is the bread you make and give away ;)

Enjoy, and please let us know how much YOU love it! I'm telling you, you won't be able to have just one slice! 


Pumpkin Bread

5 large eggs

1 cup canola oil

1 small can pumpkin

Combine the following in a separate bowl:

2 ½ c all-purpose flour

2 c sugar

1 t baking soda

1 t cinnamon

½ salt

1 box (lg) cook & serve vanilla pudding

In mixing bowl, beat eggs on medium speed, about 2 minutes. Add the pumpkin, beat another 2 minutes. Add oil until mixture is blended well. Gradually add flour mixture and beat until everything is blended together.

Preheat oven to 325 degrees, grease 2 loaf pans and sprinkle with cinnamon sugar. Bake 55 minutes or more until done.
