Nacho Bake

This is a family favorite, especially with the kids. It’s so easy; I can toss it in the oven and it’s ready when we get off the boat or return home from sports.


Mix in a baking dish:


1 lb beef, browned with taco seasoning

1 cup sweet corn

1 can beans (any type will work; we often use black beans)

1 small can sliced olives.


Top with shredded cheese and bake at 350 degrees for 20 minutes.


Prepare for serving:


1/2 cup shredded purple cabbage

1/2 cup shredded carrots

Your favorite salsa

Fresh guacamole


The kids love the nacho bake with chips. For a healthy option, toss cabbage, carrots, salsa and guacamole in a bowl and add a spoonful of nacho bake.
